Risotto is always a good idea, especially if the recipe includes bright and fine ingredients like cherry tomatoes and mushrooms. Serve this delicious risotto as an appetizer or prepare it as a quick and delicious lunch

Rice is an excellent food because, in addition to being prepared quickly, it is an excellent base for various combinations. This time we mix previously stewed cherry tomatoes and mushrooms with rice and cook everything together in a meat base to make the risotto fuller. Choose the mushrooms you like best or the ones you find in the store, and add the sage leaves before serving.
- 400 g round grain rice
- 1 liter of meat stock
- 300 g mushrooms
- 300 g cherry tomatoes
- Olive oil
- White pepper
Heat the stock on the stove or in the microwave. Wash, dry, and halve the cherry tomatoes. Clean the mushrooms well and cut them into pieces.
Pour a little oil into the pot, then simmer the mushrooms and tomatoes. Season, add rice, and cook for a few minutes. Add half of the stock and when you see that all the liquid has been absorbed, add the rest of the stock and let it cook for 18 to 20 minutes.
Try the rice and if it is well cooked, turn off the heat and leave it covered for two to three minutes.
Serve the rice with a few leaves of fresh sage.
