Refreshing cakes that are made quickly are all we need during the hot summer days. One such is the peach cake, which represents a real refreshment, especially during the first days of summer, which has officially arrived. The recipe for the preparation is extremely simple, and the best of all is that it is not obligatory to use only peaches, but you can also use any other fruit if you like.


For the crust:

- 2 eggs

- 2 tablespoons of sugar

- 2 tablespoons of oil

- 2 tablespoons of flour

- half a bag of baking powder

- 100 ml of milk

For filling:

- 600 ml of milk

- 2 vanilla puddings

- 360 g sour cream

- 4 tablespoons of sugar

- 4 peaches

- 1 bag of starch

- 300 ml of peach juice

Separate the egg yolks from the egg whites, then add sugar and whisk them firmly like whipped cream. Then add the egg yolks, flour, oil, and baking powder and whisk everything again. Line a baking tray with baking paper, then pour the mixture and bake for about 10 minutes in an oven preheated to 400 degrees. When the crust is ready, take it out of the oven and sprinkle it with a little milk. Wash and peel the peaches, then cut them into rings and arrange them. Bring the milk with the sugar to a boil, and then cook the pudding following the instructions from the bag. Stir until thickened.

When the milk thickens, remove it from the heat, then add sour cream to the hot pudding and mix everything together. Pour the filling over the peaches and leave it in the fridge to set and cool. Heat the peach juice, prepare the starch according to the instructions on the bag and combine with the juice. Allow to cool slightly, then apply the liquid to the cake. Arrange more chopped peach slices on the cooled cake, cut the cake to the desired size and serve.
