Healthy banana pancakes for a great breakfast

Healthy Banana and oat pancakes with the addition of coconut flour will melt in your mouth. You only need a few ingredients for them. Since they do not contain sugar, ripe bananas will serve as a natural sweetener.


  • 2 large ripe bananas
  • 2 eggs
  • 40g coconut fluor
  • 50g ground oatmeal
  • 1dl water
  • 1 teaspoon baking powder

Preparation:  Mash the bananas with a fork, add eggs to them and put them all together. Add the other ingredients, combine and leave for about 10-15 minutes for the oatmeal to swell a bit. Grease the pan (with sunflower or coconut oil or butter). Pour a tablespoon of the pancake mixture into the pan.

It is crucial that the pancakes are smaller so that you can turn them nicely because if they are bigger, there is a possibility of cracking when turning. Bake them for 1-2 minutes on one side, then another 1-2 minutes on the other side. Do not turn them too soon. 

You can serve with honey, maple syrup, or your favorite homemade spread. You can decorate them with fruit or with roasted hazelnuts.
